My name is Anju and I am a full time realtor, mom, and extremely passionate about cooking. My recipes are very simple and easy which working parents or people can make easily. Most of my recipes are Indian or Indian fusion with some unique twist.

I was born and raised in India and moved to US after marriage with my husband and daughter who was 3 months at the time. From having house help and family all the time around in India, I was here doing everything by myself, so I had to find easy and quick ways to cook traditional Indian dishes without losing their taste. So I began experimenting and came up with unique twists to traditional dishes which my family absolutely loved.
In the future, it is my aspiration to start my own cooking blog or website and create thousands of quick and easy recipes. In addition, I also plan to add more virtual classes and help people to create dishes with leftovers and whatever they have in their pantry.

I love this Bento box for myself and my whole family. When I am on the go for the whole day showing houses to clients, then lunches/ snacks packed in my bento boxes are my saviors.

I pack healthy snacks and lunches for me and my family in these and this way we always have fresh food with us and it saves time and money as well. My whole family loves the bento boxes, they are so compact, yet spacious and fit easily in backpacks or totes. I love aqua and coral color the most in the bento box collections and love packing everything in them from sandwiches, oatmeal, salads to Indian curry and rice.

 

Anju’s Recipe

Indian version of Poke Bowl with leftover rice and paneer

I had leftover rice and paneer in my fridge and was thinking how to use it to make meal for 2, so I tried to make a poke bowl with a twist. At first, my daughter was hesitant to try it, but when she tasted it, she loved it and from past 3 days she is asking for the same meal. Give it try it, you will love it. 

Ingredients:

3/4 cup rice 

1/2 cup paneer (can substitute with tofu/ salmon)

1/2 avocado

1/2 cup shredded cabbage 

1/2 cup Lima beans

1/4 cup shredded carrot 

1/4 cup sliced radishes

1/4 cup cucumbers

1 tablespoon soy sauce

1/2 tablespoon rice vinegar 

1/2 teaspoon black sesame seeds

1/2 tablespoon sesame oil

1/2 tablespoon hot sauce 

1 tablespoon mayonnaise 

Directions:

  1. Put paneer, soy sauce, rice vinegar and sesame oil in a pan

  2. Pan fry paneer until all the sauces are absorbed.

  3. Now arrange paneer and all the ingredients in a bowl and sprinkle sesame seeds on top.

  4. To add extra spice, you can use spicy Mayo by mixing mayonnaise and hot sauce. 

I have used bento bowl here which I absolutely love and it is so easy to carry my lunch in it. It is so compact, yet spacious and fits easily in my tote bag.
